Many surprising facts about chocolate making, its tasting, its history and the culture of cocoa. Like this anecdote, for example: at the harvest, the cocoa bean has a tangy taste similar to that of lychee or mango. It is only after fermentation and roasting that it acquires its characteristic chocolate flavor. We finish the workshop with a tasting and a playful quiz.
